Everyday my mother, cooked simple food but always with a lot of care, good ingredients, that were cooked and seasoned properly.
For special occasions, such as family reunions or friends visiting, my mother would then cook mind blowing dishes to the delight of everyone around the table.
I have very fond memories of these moments and will never forget the feeling in the room.
In this workshop I have selected 3 of my mum’s recipes and would like to enjoy them with you.

- Prawn à l’Armoricaine (prawns cooked in a “Bisque” sauce with small diced vegetables then infused with bay leaf and cognac)
- Wood roast breast of duck with green peppercorn, turnips and prune Dauphinoise, braised celery and cabbage
- Brown butter and almond pear tart, salted caramel ice cream
